Vegetable idli recipe | How to make tarakari masala idli

This tarakari idli is prepared using rice, urad dal, coconut, curd, coriander leaves, ginger, green chilli, curry leaves, mixed vegetables etc., Vegetable masala idli takes lesser time to prepare and it is healthier. You can serve these instant soft idlis with coconut chutney or sambar.

I have used carrot, beans, capsicum, corn and peas in this vegetable recipe, which you can replace it with any other vegtables of your choice. Also I have fermented the batter for 4 hours. You can add eno fruit salt or cooking soda to make instant idlies.

Vegetable idli

Preparation time: 2 hours
Cooking time: 30 min
Serves: 20 idlis

Ingredients: (measuring cup used = 240ml)

  1. 1.5 cups raw rice or idli rice
  2. 1/2 cup urad dal
  3. 1/4 cup poha or avalakki
  4. 1/2 cup fresh grated coconut
  5. 1/2 cup sour curd or buttermilk
  6. 1/2 tsp eno or 1/4 tsp soda (optional)
  7. Salt as per your taste

Ingredients for tempering:

  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp chana dal
  • 1 tsp urad dal
  • 1 onion finely chopped
  • 1 - 2 green chillies finely chopped
  • 1 tsp ginger
  • 1 tbsp curry leaves chopped
  • 1 carrot finely chopped
  • 7 - 8 beans chopped
  • 1/2 capsicum chopped
  • 2 tbsp sweet corn
  • 2 tbsp green peas
  • Instructions for making vegetable idli:

    1. In a container, soak rice for 1 hour. Soak it for 2 hours if using idli rice.rice for vegetable idli recipe
    2. In another container, soak urad dal and avalakki for 1 hour.urad dal and poha for vegetable idli recipe
    3. Heat oil in a pan. Add mustard seeds, urad dal and chana dal. Wait until mustard seeds splutter.tempering for vegetable idli recipe
    4. Add chopped onion, ginger, green chilli and curry leaves. Give it a quick mix.onion, ginger, green chilli and curry leaves for vegetable idli recipe
    5. Next add finely chopped mixed vegetables. You can add any vegetables of your choice.mixed vegetables for vegetable idli recipe
    6. Fry everything together for a minute and switch off the stove.fried ingredients for vegetable idli recipe
    7. Take soaked urad dal and avalakki in a mixie jar. Grind it into a fine batter by adding required water.soaked urad dal and poha for vegetable idli recipe
    8. Transfer it into a container.ground batter for vegetable idli recipe
    9. Next take soaked rice in the same mixie jar. Grind it into a coarse batter by adding required water.soaked rice for vegetable idli recipe

    12. Add grated coconut and chopped coriander leaves.coconut and coriander leaves for vegetable idli recipe

    14. Add fried ingredients. Make sure the fried ingredients are warm.fried vegetables for vegetable idli recipe
    15. Give it a good mix. Ferment the batter for 3 - 4 hours. You can add 1/2 tsp eno or 1/4 tsp soda to avoid fermentation and to prepare instant idlies.batter for vegetable idli recipe
    16. Grease the idli plates with oil or ghee and drop the batter intto the idli plates.batter in idli moulds for vegetable idli recipe
    17. Steam the idlies for 15 minutes. Place the idli plates only after the steam starts.steaming for vegetable idli recipe
    18. Soft and healthy idlies are ready to serve. Serve the hot idlies with coconut chutney or sambar or rasam.vegetable idli recipe
